How to preserve truffles
To keep its aroma as much as possible it should be avoided the contact with water that would cause maceration of tissue and then the rapid deterioration of the fruit .
In the meantime an excessive evaporation of water / moisture worsens its qualities, because the truffle dries becoming though losing fragrance and causing a drop of weight that was very damaging for its economic value.
For all these reasons we understand that paper or cloth wrapped around the truffle maintain an atmosphere of moisture to minimize evaporation. It is recommended to use a well sealed container so that the scent won’t disperse.
Before putting in the container it is better to clean truffles: cleaning should be done with a brush of medium hardness to remove most of the earth, then with a cloth to remove gently the remaining pieces of earth.
Truffles can be stored under sand or clay in a wooden box but it is less practical.
Some people prefer to keep truffles in sealed jars with rice, in the refrigerator, but it keep lesser and it is a good way if the rice is then cooked and prepared with truffle otherwise is not valid because rice absorbs the smell of truffle.
